Chocolate Cherry Scones
Since I am from Traverse City, MI (cherry capital of the world), I am a massive fan of cherries. My go-to scone flavor is always chocolate chip cherry, though this recipe can be adapted to use whatever your preferred scone mix-ins are!
Ingredients:
1/2 cup heavy cream
1 egg
1 tsp vanilla
2 cups flour
1/2 cup sugar
1 Tbsp baking powder
1 tsp salt
1 stick of butter (very cold)
3/4 cup chocolate chips
1/2 cup dried cherries (preferably from Traverse City 🙃)
Method:
•Preheat oven to 400
•In a medium size bowl, mix together heavy cream, egg, and vanilla and set aside while you mix together the dry ingredients
•In a separate bowl, mix together flour, sugar, baking powder, and salt
•Once the dry ingredients are mixed together, add in the butter (either cube the butter with a knife or grate using a cheese grater). Use a pastry cutter, two knives, or your hands to mix the butter in to the dry ingredients until the butter is about the size of a pea
•Then add your wet ingredients to your dry ingredients. I like to start out using a rubber spatula for the beginning and then I switch to using my hands for the very end
•Once the dough has come together, add the chocolate chips and dried cherries and use your hands to incorporate them in the dough
•On a baking sheet lined with parchment paper or a silicone baking mat, form two small discs. They should be about 3/4” thick.
•Using a butter knife, cut each disc into 8 equal triangles
•Brush the scones with a little bit of heavy cream and sprinkle coarse sugar on top
•Bake for 16-20 minutes
